Option to mark all questions "unattempted."

In the event that I want a student to redo all tasks in an assessment, having the option to mark all questions as "unattempted" to essentially reopen the whole quiz/test would be convenient.

Video feedback option to insert feedback at specific points

Allow teachers to provide feedback to students when they submit videos. Allowing teachers to pause the video when they hear or see (ASL) an error and can give students immediate feedback at the "time" in the video.

Created questions can be selected to add to a question bank for easier assessment creation. When adding to the question bank teachers could tag the question with different parameters for easier filtering later on (summative, formative, etc.)

Copy assessment + edit right away

Instead of just copying and going right back to the class, allow teachers to click 'copy and edit' which would take them into the newly created assessment.
